Hearty Hemp Muffins

(makes two dozen muffins or so)
1 cup hempseed flour
1 cup flax seeds, before grinding (best freshly ground)
1 cup sucanat or other solid sugar of your choice
2 cups of appropriate starch flour such as:
a) 1 cup brown rice flour & 1 cup buckwheat flour
b) 2 cups yam flour
c) 1 cup rice flour 1 cup millet flour
I have lately added 3/4 cup of rice bran powder and it works!
Spices are:
1-3 teaspoons of salt (i sometimes substitute one of the teaspoons with
potassium chloride)
2 tablespoons coriander powder
1 teaspoon cinnamon powder
1/4-1/2 teaspoon powdered ginger
1/8 teaspoon cardamom powder
1/16 teaspoon clove powder
1-2 eggs
1 to 1.5 teaspoons of vanilla extract
1 to 1.5 teaspoons of baking soda
1 to 1.5 teaspoons of baking powder
I beat the eggs first, adding the vanilla extract. Then I add 3-4 cups of
water, beat again. Then I add premixed dry ingredients. Mix the leaveners in
some water and add that. I sometimes add almond oil or a good, fruity olive
oil. Add oils at the beginning to mix them in well. Use an electric hand
blender for the mixing and use two one-dozen muffin trays. In small ovens
two muffin trays may be too big, causing heat distribution problems. I have
found using one single-layer brownie tray, which is smaller and also more
heat circulation, can help immensely. I just switch trays mid-way through
the baking process.
I recently used the recipe modified with 1.5 cups hemp flour, 1.5 cups yam
flour, 1 cup flaxseeds (pre-grinding volume), 3/4 cup rice bran powder, 1
cup sugar mix and it turned out great.
I thoroughly believe in the superior protein content of hemp. As a person
who uses his body actively, experimenting with hypercaloric bulking phases
and hypocaloric "life extension" calorie-restriction phases, I have
personally experienced the superiority of hemp flour. The protein content is
truly more digestible (with adequate cooking) and complete than ANY other
vegetal protein. Soy can't compete. Not even properly fermented soy can
compete. I'm an O blood type who is aware of the blood-type diet and what
some of the foods do to us, how they affect our appetites. I'm also aware of
what proper food-combining has to offer, and have found that meat & fat
eaten away from carbohydrates allows for the most energy-efficient digestion
and assimilation, beyond any diet system. I can say from this vantage point
of digestive and metabolic clarity that hempseed flour is the most fantastic
vegetarian foodstuffs I've ever been fortunate enough to eat. It truly keeps
me going strong and healthy in between the paleolithic style meals I've come
to depend on. I hope you guys get to experience the great life-giving
properties of these foods. I like to make my own butter-cream, with half
almond oil and half grass-fed, home-made ghee. I like to spoon a crater in
the muffins and push a dollop of buttercream on top, then cover with a thick
home-made blueberry jam. Delish!
