Chai (Indian) Style Tea

5 cups 

water

4 black tea bags, packaged or loose leaf

3 cups 

non-fat milk or soy milk

1/3 cup 

honey

4 sticks 

cinnamon (or ¼ tbsp ground)

whole cloves (or 1/8 tbsp ground)

bay leaf

6

whole cardamom pods, green or black (¼ tbsp ground)

 

Directions: Combine all ingredients in medium saucepan and bring to a boil. Reduce heat and simmer, uncovered, 30 minutes. Strain. Wonderful chilled or hot. This is a mild chai. For a more spicy flavor, increase cinnamon, cloves and cardamom proportionally. Yields 2 quarts.
