| Parsley contains two important chemicals, apiole
and myristicin, that have significant diuretic and mild laxative qualities. It can help
eliminate bloating and excess water weight. Eases the pain of flatulence (gas) and colic,
and has a reputation for bringing on delayed or suppressed menstruation. Valuable in treating gall bladder, menstrual, asthma, coughs and indigestion problems. In one study, Parsley was shown to have antihistamine qualities, which make it useful in relieving allergy symptoms. Parsley ranks higher than most vegetables in an important amino acid, histidine, which strongly inhibits tumor development, according to Mutation Research (77:245-50). And the fluorine it contains is the most of any food source. It's also endowed with Boron and together with fluorine make it a good bone strengthener. It's especially rich in Vitamin A and C. Its high iron content makes it valuable in preventing anemia. Parsley acts much like Calcium channel blockers, drugs used to treat angina (moderate to severe chest pain). In Mexico, a Parsley tea is made to treat kidney inflammation, inability to urinate, kidney stones and edema. Let the herb steep for 40 minutes. Take one cup four times daily with meals. The Parsley tea also manifests mildly aphrodisiac properties and it's a good expectorant that can help clear the lungs. Use parsley to spice up salads, soups, bean dishes, fish and vegetables like artichokes, zucchini and tomatoes. Large amounts, as in infusions and tinctures, should not be used during pregnancy, since it may stimulate the womb. People with inflammatory kidney disease should not consume the Parsley root.
